Brewing Season is On
Any good brewmaster will tell you, a successful brew starts with preparation and cleanliness. The brewing season will begin in the next few days, and to get ready, we are cleaning every inch of the brewery.
This means that yesterday, we power-washed the ground floor. Today, I was up on the 2nd floor of the brewery wiping down every wood plank and panel from the roof to the floor.
It is tedious work, and corners can’t be cut because of how sensitive sake can be in the brewing process. Gotta get it right!
